Chunky Apple Pancakes W/creamy Red Hot Syrup

Main Ingredients

for pancakes:

1 apple

1 egg 2 t oil

1 c milk

1 tsp. salt

1/4 c sugar

1 c flour

1 t baking powder

for syrup:

1 c red hot candies

1 3/4 c water

1/2 c sugar

1 c evaporated milk

1 t corn starch


1First, prepare the syrup. Put the water, sugar and red hot candies into a medium sauce pan and melt the candies into the water. Stir until well blended. Mix the corn starch into the canned evaporated milk and add to the mixture. Bring to a boil while stirring until it is smooth and slightly thickened. Set aside to stay warm until the pancakes are ready.

2For the pancakes, peel, core and chop up into thin small chunks. Set the apple aside while you mix the rest of the ingredients.

3Beat together the egg, oil and milk. Then stir in the salt, sugar, flour, baking powder and milk. Stir it all together until smooth. Finally mix in the apple pieces.

4Smooth about a quarter cup of batter onto a hot, oiled griddle and get it as flat as you can. Cook until it is golden brown and flip to the other side.

5Serve with butter, Red Hot Syrup and maybe some whipped cream and sprinkles!
