Chocolate Zucchini Cake Bars
These zucchini cake bars are perfect for a sweet treat or even in the morning with some coffee or tea. With a subtle sweetness, they satisfy'll your chocolate craving while also getting in a serving of veggies. Win-win!

1 cup coconut oil
1 cup maple syrup
1/4 cup maple sugar (you can substitute with maple syrup)
1 tsp vanilla extract
1/2 cup milk
1.5 cups cassava flour
1 cup almond flour
4 tbls cacao powder
1/2 tsp baking powder
2 cups shredded zucchini
1 cup chocolate chips (optional)
1/2 cup nuts (optional)
1Pre-heat oven to 350F
2Mix coconut oil and maple syrup.
3Add eggs, vanilla, and milk and beat together.
4Mix together all dry ingredients in a separate bowl and add it to wet mixture. Beat well.
5Stir in shredded zucchini.
6Spoon batter into greased 9x13 inch pan.
7Sprinkle chocolate chips & nuts on top (optional).
8Bake for 45-50 minutes or until toothpick inserted in cake comes out clean.
Make sure to store in the refrigerator. You can frost after it cools if you'd like. I think a cream cheese or peanut butter based frosting would be fantastic!
