Main Ingredients

chocolate pudding

1 cup almond, soy, or coconut milk

2 tbsp unsweetened cocoa powder

2 tbsp maple syrup

1/4 cup chia seed

mint pudding

1 cup almond, soy, or coconut milk

2 tbsp maple syrup

1/4 cup mint leaves, lightly packed

1/4 cup organic baby spinach, lightly packed

1/4 cup chia seed


1In two small containers with a lid, measure out 1/4 cup of chia seed per bowl. Set aside.

2In a blender, blend all ingredients for chocolate pudding (except for chia seed). Pour mixture over one of the bowls of chia seed and stir to combine

3Rinse blender and repeat with mint pudding ingredients. Blend together and pour over the second bowl of chia seed. Stir to combine.

4Place bowls in refrigerator and let chill for 1-2 hours.

5Layer pudding and serve cold.
