Main Ingredients

1/4 cup orgain vanilla protein powder

1/4 cup hulled hemp seeds

2 ripe bananas

1 cup spelt flour

2 tsp baking powder

2 tbsp unsweetened cocoa powder

1/4 cup old fashioned oats

1/3 cup cane sugar

1/4 tsp ground cinnamon

1/2 tsp vanilla extract

1/3 cup unsweetened apple sauce

1/2 cup chocolate almond milk

2 tbsp melted vegan butter

1/4 cup unsweetened shredded coconut

1/4 cup chopped walnuts

1/4 cup vegan chocolate chips


1Preheat oven to 400° F

2Line muffin pan (makes 10 muffins)

3Combine all dry ingredients

4Add wet ingredients and combine with dry ingredients until mixed

5Fold in shredded coconut, walnuts and chocolate chips

6Bake for 25-30 min, or until inserted toothpick comes out clean
