Choco-chip Cookies (whole Wheat)
Choco-chip cookies are a favorite around our house. I like to make different variations but these are the best. The recipe can be easily modified to suit dietary preferences and/or restrictions.

1/2 butter or coconut oil
1/2 demerara style brown sugar
1/4 cup organic sugar
1 free range egg
1 tsp vanilla extract (natural)
1/2 cup organic whole wheat flour
1/2 cup organic unbleached flour
1/2 tsp salt
1/2 tsp baking soda (prefered bob's red mill)
1/2 tsp cornstarch (non-gmo)
1/2 to 3/4 cup of carob or chocolate chips
1Combine butter or coconut oil with sugars and whip with hand mixer, when completely combined and fluffy add egg (whip for another two minutes).
2Add vanilla extra and stir to combine.
3On top of wet ingredients, add flours, baking soda, salt and cornstarch. Blend with handmixer until batter forms into a ball.
4Remove hand mixer and add chocolate chips. Blend with a spatula or spoon until well mixed.
5Scoop 1 tbsp portions onto baking sheet, bake at 375 degrees farenheit for appoximately 10 minutes or until cookies are lightly browned.
