Chipotle Split Pea Soup

1 large sweet potato, peeled and diced into same size pieces
1 large onion, diced into small chunks
2 large carrots, cut into coins
1 clove garlic, minced really fine
1 1/2 cups yellow split peas, rinsed, sorted, and drained
32 oz water or veggie broth
himalayan sea salt, to taste
ground black pepper, to taste
1 1/2 tsp ground cumin
3/4 tsp ground chipotle powder
dried parsley, to serve
nutritional yeast, to serve
1Gather, rinse, wash, and dice/mince sweet potato; onion; carrots; and garlic. Dump all veggies into at least 4 quart slow cooker.
2Add water and all spices (salt, pepper, chipotle powder, and cumin) to veggies in slow cooker. Stir to combine.
3Put on the lid and set on high for 3 hours; stir, then switch to low for 1-2 hours.
4Stir after cooking time is through.
5To serve, ladle into bowls and sprinkle with ground parsley and nutritional yeast. Enjoy!!
