Chimichurri Scallops W/ Orange Blossom Honey
Scallops have long been established as a delicacy of the sea and that’s part of the reason that they cost more per pound than lobster, salmon, and all the other shellfish. The secret to this exquisite dish is the Orange Blossom Honey, an unforgettable golden honey that captures the heavenly flavor of the Florida orange groves.

4 large scallops
2 tbsp oregano
2 tbsp cilantro
1 garlic clove
1/4 tsp black pepper
1/4 tsp kosher salt
1 tbsp orange blossom honey
1/4 tsp red pepper flake
1 tbsp butter
3 tbsp olive oil
1First, blend oregano, cilantro, black pepper, salt, red pepper flakes, garlic, and the orange blossom honey in your food processor until it is formed into a paste. Add 2 tbsp olive oil while pulsing on low until the paste smooths and all the oil is in incorporated. Set aside when finished.
2On to the scallops. Make sure that your scallops are clean and free from extra sand and debris. Season hem with kosher salt and pepper to taste.
3Next, heat some butter and the remaining tbsp of olive oil over medium heat in a non-stick skillet.
4Cook the scallops for 1 1/2 minutes per side.
5Garnish the scallops with chimichurri over the top and serve immediately.
