This version of the classic Argentine marinade/dressing delivers sparkling flavor from a ton of herbs and a good shot of red wine vinegar.

1/2 cup red wine vinegar
1/2 teaspoon sea salt
2 garlic cloves, minced
2 tablespoons finely chopped red onion
1 - 2 teaspoons minced jalapeño
1/4 cup minced fresh cilantro
2 tablespoons minced fresh flat-leaf parsley
1 tablespoons finely chopped fresh oregano
6 t extra-virgin olive oil
1Combine garlic, red onion, and jalapeño in a small bowl. Sprinkle with salt, then pour vinegar on top. Let stand for 10 minutes.
2Stir in cilantro, parsley, and oregano. Whisk in oil with a fork.
3Store in the refrigerator. Use 1-2 tablespoons per serving of salad, or use as a marinade for vegetables, meat, or fish.
