Main Ingredients

for the chicken skewers

10 ounces skinless chicken breasts, sliced into strips

1/2 cup coconut milk

1 tablespoon honey

2 tablespoons tamari sauce

1/4 cup cilantro leaves, finely chopped

3 garlic cloves, finely diced

pinch of ground turmeric

1 teaspoon ground cumin

1 fresh red chile, seed and finely chopped (optional)

for the satay sauce

1/2 cup peanuts, crushed

1 tablespoon soy sauce

1 teaspoon turmeric

1 teaspoon honey

1 tablespoon coconut milk

2 tablespoons fresh cilantro, finely chopped


1These chicken skewers can be baked or grilled. If you choose to grill, soak wooden skewers for 20 minutes in water before using.

2Place all the ingredients including chicken strips in a large bowl and combine well. Marinate the chicken in the refrigerator for 2 hours.

3Preheat oven to 400 degrees.

4Place the marinated chicken strips on a baking sheet and bake in the oven for 15 - 20 minutes, turning them halfway through, or until cooked. Alternately, thread onto skewers and grill.

5Make the satay sauce. Place the ingredients in a bowl, add a tablespoon of water and blend in a blender.

6Serve Chicken Skewers with the satay sauce.

Additional Notes

This recipe is also delicious with shrimp.
