Chicken Mozzarella Sticks

Main Ingredients

1 medium to large chicken breast (each breast is enough for about 6 sticks)

1 fresh mozzarella cheese block


1 large beaten egg

panko or breadcrumbs

frying oil

marinara sauce for dipping


1With a nicely sharpen slicing knife, slice very thin layers of the chicken breast, trying not get holes on it. If you get any, don't get frustrated. you can use some of the remaining portions of the chicken to patch it

2Cover each slice with a piece of plastic wrap, and with a kitchen mallet, gently flatten each one

3Season the slices with salt and pepper, very lightly, since we are using already seasoned Panko

4Cut the mozzarella cheese in slices of about 1/4" thick and by the length of the mozzarella cheese block. You will have to trim the length of the cheese, based on the actual size of your chicken breast, but it should be around 3 to 4" long

5Place the chicken breast with wider side towards you

6Using a brush or your own finger place a generous amount of beaten egg all around the edges of the chicken breast. The egg will literally act as glue to keep the breast together as you roll it around the cheese

7If your chicken breast is wide enough, simply place the cheese horizontally (image 2 below), and roll the breast around the cheese, starting at the wide side. Place additional egg as needed as you go to keep the chicken edges 'glued'. It might take you couple of tries, but you'll get it

8If the chicken breast is somewhat narrow, place the cheese diagonally (image 3 below), and roll the breast diagonally, coiled-style, around the cheese

9In both cases, you might need to use kitchen shears to trim any excess chicken

10After chicken is rolled, dab all sides on flour, then beaten egg, and finally on Panko

11In a frying pan, warm vegetable oil in medium heat for 3-5 minutes. You want the oil nicely warm, but not crazy hot. Fry the mozzarella sticks until golden brown, and cheese starts to melt

12Serve warm, with a side of marinara sauce
