Chicken Meatballs With Spiralized Veggie Pasta
These chicken meatballs are easy, fun, and freezable! It's great to batch cook them and freeze them for a quick homemade "frozen dinner" I pair them with spiralized veggies to pack in the flavor and the health benefits. A great meal prep tip is too pre-cook the meatballs and freeze the left overs, spiralize the veggies and keep them in a pyrex on hand for when you are ready!

2 lb or ground lean organic chicken
1 teaspoon of dried oregano
1 bunch of parsley, stemmed, and chopped
1/2 onion, diced
2 cloves of garlic minced
1/2 parmesan cheese
salt and pepper to taste
3 - 4 zucchini spiralized
1 clove of garlic, minced
parmeseam cheese, grated
1 can of high quality tomato sauce like mur glen
1 carton on cherry tomatos, quarted
1Pre-Heat oven to 400 and line a baking sheet with parchment paper.
2Combine, garlic, onions, parsley, parmesan cheese, ground chicken, oregano, salt and pepper in a large in mixing bowl and stir to combine.
3Use your hand to form about 1 inch think meatballs and set on a lined baking sheet.
4Bake for 15 mins, flip, and bake for another 10 mins.
5While meatballs are cooking, add about 2 tablespoons of olive oil or avocado oil large pan. Saute onions over medium high heat for about 5 minutes adding a pinch of salt and stirring often. Add in tomato sauce and chopped tomatoes. Continue to stir and turn the heat to medium low.
6Remove from oven and place meatballs into a large, deep skillet or pan. Adding in the tomato sauce and tomatoes.
7Cook over medium heat for about 6 mins.
8Add in the spiralized zucchini, a little salt and pepper and saute on medium heat for another 5 mins.
9Serve with fresh mozzarella , parmesan cheese, and basil.
To freeze meatballs: Once the meatballs are fully cooked and cooled , place them on a parchment paper lined baking sheet in the freezer. Once the meatballs have frozen remove them and store in an air tight container. Can be stored for up to 3 months. To reheat: Meatballs can be heated up on the stove top in soup or in a sauce, as well as in the oven at 350 for about 15 mins.
