Spray a large sauce pan with Pam cooking spray and add 1 tbsp coconut oil. Prepare quinoa pasta as directed on box. Main Ingredients

1 lb ground chicken or turkey

2/3 cup ezekiel crumbs

1 egg (large whole)

1 tbsp parsley

1 tsp onion powder

1/2 tsp garlic powder

salt and pepper to taste

1 jar organic low sodium marinara sauce

1 box quinoa paste

Preparation

1Spray a large sauce pan with Pam cooking spray and add 1 tbsp coconut oil.

2Prepare quinoa pasta as directed on box.

3In a bowl mix together ground chicken, Ezekiel bread crumbs (I make my own with Ezekiel bread), egg, and seasoning. Make into small meatballs and put in sauce pan to cook over medium heat. Cook meatballs until all sides are browned.

4Pour organic marinara sauce over meat balls and cook over low/medium heat for 10 minutes, making sure the meatballs are cooked through.

5Divide into 6 servings and put one serving over 1 cup cooked quinoa pasta.
