3 - 4 skinless, boneless chicken breasts
2 garlic cloves
1/2 cup pitted prunes
1/2 cup spanish olives
1/4 cup red wine vinegar
1/4 cup water
1/2 cup white wine
3 tbsp brown sugar
2 bay leaves
3 tbsp olive oil
2 tbsp oregano (dried or fresh)
salt/pepper to taste
1Dice garlic, cut prunes in half and olives (if large).
2Add all ingredients and marinate for an hour in fridge.
3Place all ingredients, including marinade, into the Instant Pot.
4Set onto High Pressure for 20 minutes. (It will take 5-10 mins to ciome to pressure).
5Slow or quick release (your choice).
6Serve with asparagus and baby potatoes or your choice of sides.
