Chicken, Beet & Quinoa Salad With Goat Cheese
This is a perfect re-purposed leftover salad, rich in nutrients, high in fibre and healthy fat! A quick and easy salad for lunch or dinner!

2 - 3 cups mixed greens (spinach, romaine, argula)
1 cup quinoa, cooked
1 cup chicken, cooked
1/2 cup beets – grated, pickled, steamed or roasted
1 green onion, finely sliced
2 tbsp goat cheese
1 tbsp walnuts
1 tbsp olive oil
1 tbsp balsamic vinegar
salt & pepper
1Layer the ingredients, in order on a large plate. Drizzle oil and vinegar over salad.
To make this salad for a family, side dish or potluck, simply double, triple or quadruple the measurements! You really can't go wrong with this salad!
