Chia Oat Pudding
Super tasty healthy breakfast (omit oats for a dessert version).

Cook Time: 08:00
1 cup rolled oats
2 tbsp nut butter
1/2 cup frozen berries
1/4 cup plain greek yogurt
1 tbsp flax seeds or ground flax
1 can coconut milk (unsweetened-trader joe's sells low cost cans)
4 tbsp chia seeds or tbsp tj's super seed and ancient grain blend
1 banana (substitute unsweetened apple sauce for a lower glycemic version)
1Combine all ingredients in a large mixing bowl. Mix and leave covered in the fridge overnight. In the morning (or a minimum of 6 hours later) blend until smooth and serve cold.
This is a great way to get kids to eat healthy breakfasts and desserts.
