Main Ingredients

3 cups shredded zucchini

1 cup bisquick

1 cup chopped onion

1/2 cup shredded parmesan

2 tablespoons fresh parsley

1/2 teaspoon salt

1/2 teaspoon dry oregano

1/2 teaspoon seasoned salt

dash pepper

4 slices bacon

4 eggs


1Fry slices of bacon and set aside to cool. Drain most of the bacon fat. Leave 1 tablespoon in the pan and sauté onions until brown.

2Preheat oven to 350 degrees. Butter a 13" x 9" pan.

3Mix all ingredients and spread in the pan. Cook for 25 minutes.
