Cheesy Broccoli And Quinoa Wraps

1 1/2 cups uncooked quinoa
1 Large head of broccoli, chopped into small florets
4 Large tortilla wraps (i prefer spelt flour wraps but whole wheat or white work well too)
1 1/4 cup cashews
1 cup almond or soy milk
2 tbsp nutritional yeast
2 tsp white vinegar
1 tsp salt
1 tsp dijon mustard
1 tbsp earth balance butter, melted
1In a large pot, cook the quinoa according to package instructions.
2In another pot or vegetable steamer, steam the broccoli until soft.
3Prepare the cheese sauce by placing all ingredients into a high powered blender. Blend on high for 1-2 minutes until creamy.
4Pour the cheese sauce into the pot with the quinoa and mix to combine. Add the broccoli and stir again.
5Spoon some of the quinoa mixture onto a tortilla shell. Fold it like a burrito and continue with remaining tortillas until the quinoa mixture is gone.
