Reduced Fat Cheesy Beef Quesadillas

Main Ingredients

1 lb . lean ground beef

2 cloves garlic, minced

1 onion, diced

1 tbsp. reduced sodium taco seasoning (you can also make your own)

2 tbsp. tomato paste

8 oz. can no salt added black beans, rinsed and drained

2 avocados, pitted and diced

1/4 c. chopped fresh cilantro

4 tsp. olive oil, divided

4 large whole wheat flour tortillas

8 oz. shredded reduced fat white cheddar cheese

reduced fat sour cream, for serving

Preparation

1In a large non-stick skillet over medium-high heat, brown beef. Sauté with garlic and onion until softened, 3 to 4 minutes.

2Add taco seasoning, tomato paste, 1 tbsp water and black beans; cook on medium-low for 5 minutes. Turn off heat and mix in avocado and cilantro.

3Warm a large non-stick pan over medium heat with 1 teaspoon oil.

4Place a flour tortilla in the pan and sprinkle with cheese and beef mixture.

5Fold tortilla over and fry lightly on both sides until cheese is melted.

6Repeat with remaining tortillas.

7Cut quesadillas into wedges and serve with sour cream.
