Charred Cabbage With Tahini And Pomegranate
Simple and delicious side to any Mediterranean or Middle Eastern entree.

1 green cabbage
juice of half a lemon
2 tbsp fresh tahini
1/3 cup pomegranate seeds
cracked salt and pepper to taste
Seasoned Olive Oil
1/3 cup extra virgin olive oil
1 clove fresh minced garlic
1/2 tsp sumac
1Slice a head of cabbage into 5-6 large wedges
2Place the wedges over a hot grill, rotating each after 1-2 minutes until each side is lightly charred
3Place cabbage on a parchment lined baking sheet and paint all sides with seasoned olive oil mixture
4Once evenly coated, crack desirable amount of salt and pepper over top
5Place on middle rack in oven at 425° for 20-30 mins (cabbage should be a bright greenish-yellow in colour)
6Let cool. Drizzle with tahini, lemon juice and EVOO.
7Top with pomegranate seeds and enjoy!
