1 green cabbage

1/3 cup pomegranate seeds

cracked salt and pepper to taste

seasoned Olive Oil

1/3 cup extra virgin olive oil

1 clove fresh minced garlic

1/2 tsp sumac

yogurt drizzle

half of a lemon, juiced

1 tbsp extra virgin olive oil

1/2 cup plain greek yogurt or kefir

1 tsp garlic salt or 1 clove garlic minced


1Slice a head of cabbage into 5-6 large wedges

2Place the wedges over a hot grill, rotating each after 1-2 minutes until each side is lightly charred

3Place cabbage on a parchment lined baking sheet and brush all sides with seasoned olive oil mixture

4Once evenly coated, crack salt and pepper over top, to taste

5Place on middle rack in oven at 425° for 20-30 mins (cabbage should be a bright greenish-yellow in colour)

6While the cabbage is in the oven make the yogurt drizzle; whisk the lemon juice, 1 tbsp extra virgin olive oil, greek yogurt, and garlic salt together until combined. If the mixture is not thin enough to be drizzled add a tbsp of water.

7When cabbage is done roasting remove from oven; let cool. Top with yogurt drizzle and pomegranate seeds!
