Chai-maple Apricot Filling

2 cups dried apricots, diced
1/2 cup quality maple syrup
32 ounces classic chai, (1 quart)
1 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cardamom
1 cup toasted chopped nuts, (after mixture has cooled)
1In a saucepan combine apricots, maple and chai. Bring mixture to a boil and then reduce heat down to a simmer.
2Cook mixture, uncovered for about 30 minutes, until liquid has mostly evaporated and mixture has thickened. Some of the apricots will fall apart, while others will keep their shape.
3If using any of the additional spices, add them in the last 10 minutes of cooking.
4Cool mixture completely before adding the optional nuts and before using the filling.
