Cauliflower Alfredo Sauce

Combine all of the ingredients except for the lemon juice in a pot over medium heat. Main Ingredients

2 cups cauliflower florets, chopped small

1 tbsp garlic, minced

1/4 cup raw hulled hemp seeds, or substitute raw cashews

2 tbsp nutritional yeast

1 cup neutral tasting plant based milk or water

1/2 tsp onion powder

1/4 tsp mustard powder

1/4 tsp white pepper

1/2 tsp salt, or to taste

3 - 4 tbsp lemon juice

Preparation

1Combine all of the ingredients except for the lemon juice in a pot over medium heat. Bring to a boil then reduce heat slightly to a simmer, cover and cook for 13-15 minutes until cauliflower florets are completely soft and falling apart.

2Allow to cool for about 5 minutes then pour the mixture into a blender and add in the lemon juice before blending until creamy.

3The sauce makes enough for two portions of pasta, or about 8 oz of dry pasta and it will keep in a jar in the fridge for 3-5 days.
