4 Large carrots
1 tbsp liquid smoke
2 tbsp bbq sauce (or sub maple syrup)
2 tbsp soy sauce or gluten free tamari
1/4 tsp garlic powder
1/4 tsp black pepper
1/4 tsp smoked paprika
4 vegan or gluten free hot dog buns (most are vegan, just double check the ingredients list for milk, eggs, casein, or whey)
toppings of choice: sauteéd onions, ketchup, mustard, relish, more bbq sauce, pineapple, jalapeños, etc.
1Bring a large pot of water to boil.
2Using a vegetable peeler, peel the first layer off the carrots. Place the carrots into the boiling water for 10-15 minutes or until fork tender.
3While the carrots are boiling, whisk together the remaining ingredients.
4Place the carrots in a long container (tupperware, baking dish, etc.). Pour the marinade over the carrots. If you have a basting brush, that really helps to make sure they are completely coated. Let them marinate for at least one hour. I let mine marinate for 5 hours and they turned out great.
5Grill the carrots as you would a normal hot dog, rotating frequently to prevent burning. They should be cooked through from boiling them, so the purpose of grilling is to enhance the flavor. Alternatively, you can roast them in the oven (425F for 10 minutes) or heat in a frying pan over the stove.
6Assemble the carrot dogs and top with whatever toppings you prefer!
