Carrot Cake Granola

Main Ingredients

2 - 3 2 cups each oats, walnuts, and grated carrots ( large carrots)

2 tablespoons each nut butter, melted coconut oil, and maple syrup

1 tablespoon orange juice

1 teaspoon cinnamon

1/2 teaspoon each vanilla, nutmeg, and salt

1/4 teaspoon clove and dried ginger

1 cup each diced dates, dried pineapple*, and coconut chips

1/2 cup white chocolate chips

Preparation

1Preheat oven to 350.

2In a large mixing bowl, combine oats, walnuts, and carrots.

3In a medium mixing bowl, combine nut butter, melted coconut oil, and maple syrup. If needed, microwave the combination so it mixes easier. Add orange juice, cinnamon, vanilla, nutmeg, salt, clove, and ginger.

4Add liquid goodness to dry mixture, stirring until all the oats are coated.

5Spread the mixture onto a parchment or foil-lined baking sheet.

6Bake for 20-30 minutes until desired level of golden deliciousness. Stir occasionally to prevent any bits from sticking and burning.

7Remove from oven and add dates, coconut, and dried pineapple. Allow to cool before adding white chocolate chips.

Additional Notes

*be sure to get unsweetened dried pineapple. Dried pineapple is already so sweet, and I'm not sure why in the world sugar is added to it.
