Cardamom Triple Berry Jam
Berries, spice and lime juice come together to make a sweet and flavorful jam. Makes 3 x 1 pint jars

1 cup blackberris
4 cups strawberries
1 cup blueberries
3 cups granulated sugar
3 tablespoons lime juice
1 teaspoon ground cardamom
1Prep the fruit: Wash the fruit and trim and cut the strawberries.
2Place all the fruit in the bowl of a food processor and pulse to blend until uniform in color and size.
3Cook: Pour the fruit mixture into a non-reactive saucepan and stir in the sugar.
4Place the pan over medium high heat and bring to a boil, stirring often until all sugar has dissolved.
5Reduce heat to medium and keep a consistent and rigorous simmer.
6Continue stirring often to prevent burning on the bottom, skimming the foam from the top carefully (jam will be scorchingly hot). Continue cooking for about 30-45 minutes, until mixture thickens.
7Add on: add the lime juice and the cardamom and mix gently and thoroughly. Simmer for 5-10 more minutes, taste and add more flavor if needed.
8Store: Carefully pour jam into prepared, sterilized jars, cover lightly with lids and bands and let cool completely before storing in fridge.
9Can be kept in fridge for 2-3 weeks or in freezer for up to 3 months.
