Caramel Pecan Apple Pie

Prepare the crust. In a food processor, pulse the previously crushed pecans, flour, cinnamon, sugars, nutmeg, and salt until combined. Add the shortening and continue to blend until the dough starts to come together. Mix in the water, a few tablespoons at a time, until the dough is soft and smooth and does not stick to your hands. If it sounds sloshy, that means you added too much water, add more . . .

Crust

1 cup pecans, coarsely crushed in food processor

1/2 cup all-purpose flour

1/2 tsp cinnamon

1 tsp brown sugar

1/4 tsp nutmeg

1/2 tsp granulated sugar

1/2 tsp salt

1/2 cup shortening

1/4 cup cold water

@topping

1 1/2 cups all-purpose flour

3/4 cup brown sugar

1/4 tsp salt

1/2 tsp cinnamon

1/4 cup pecan pieces

1 1/2 sticks of butter, cold and cubed

@filling

21 oz can apple pie filling

1/4 cup caramel syrup

1 tbsp lemon juice

1/4 tsp cinnamon

1/4 tsp apple pie spice

1/2 cup pecan pieces

Preparation

1Prepare the crust. If it sounds sloshy, that means you added too much water, add more flour, a tablespoon at a time until smooth.

2Dump the crust onto a well-floured surface and gently form into a ball. Wrap in plastic and refrigerate for thirty minutes. After 30 minutes, remove from the fridge and preheat oven to 375°F. Roll the crust out to 1/4-inch thickness. Pull it up in pieces and press into a 9" pie pan. Bake the crust in the preheated oven and bake for 10 minutes.

3Prepare the topping. In a large bowl, mix together the dry ingredients until combined. Cut in the butter until the mixture becomes a crumb topping. Set aside until ready.

4Prepare the filling. Mix together the filling ingredients with a spoon. Pour the filling into the prepared crust. Top it off with the crumb topping. Bake for 30-40 minutes until the filling has set and crumb topping is golden brown. Make 1 nine-inch pie.
