Caprese Pasta With Goat Cheese
This pasta uses only goat's milk products to create a creamy, delicious sauce. Perfect for a week night dish!

4 oz whole wheat penne pasta
1 tablespoon olive oil
1 tablespoon flour (i used all purpose)
2/3 cup goat’s milk
1/4 cup chicken stock, to thin sauce
1/4 tsp garlic powder
1/4 tsp salt
dash of pepper
several sprigs of fresh basil
1/2 cup cherry tomatoes
2 oz goat cheese
1Bring a pot of water to a boil, add pasta.
2Cook for about 11 minutes, or until tender. Do not rinse pasta.
3In another pot on low-medium heat, pour in olive oil and flour. Whisk together and slowly pour in goat’s milk while whisking. Allow sauce to thicken and bubble, but do not burn.
4Add salt, garlic powder, and pepper. Add goat cheese and whisk until creamy. Use chicken stock to thin the sauce. (This may require more or less than what I stated above for you).
5Add tomatoes and basil.
6Pour cream sauce on pasta, garnish with a few basil leaves, and enjoy!
