1/2 cup granulated sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/8 teaspoon cayenne pepper (optional)
1 egg white
1 teaspoon water
1/2 pound pecans
1Preheat oven to 250 degrees.
2In a small bowl, combine the sugar, cinnamon, salt and cayenne pepper.
3In a separate small bowl, beat the egg whites with the water until frothy. Add the pecans and stir.
4Add the sugar mixture and stir gently until the pecans are coated.
5Spread on a parchment lines baking sheet in one layer and bake 1 hour, stirring ever 15 minutes.
6Remove from the oven and allow to cool completely.
