Main Ingredients

1 lb . 13/15 deveined shrimp

3 - 4 cloves garlic

1/2 bunch italian flat-leaf parsley

1/2 bunch cilantro

2 - 4 scallions

1/2 jalapeno, seeds removed (optional)

1/2 c. olive oil

2 . tbsp. white wine vinegar

1 tsp. ground cumin

1 teaspoon salt

for the yellow rice:

1 pkg mahatma saffron yellow rice

1 tbsp. oil

1 green bell pepper, diced (optional)

2 cups frozen green peas (optional)


1Place 2 cups of frozen peas on the counter to defrost.

2Meanwhile, in a small food processor or blender combine garlic, parsley, cilantro, scallions, jalapeno, olive oil, vinegar, cumin, and salt.

3Place shrimp and half of the sauce into a zip bloc bag, seal and massage gently. Allow shrimp to marinate 30-40 minutes.

4Next, place a medium sauce pot with 1 tsp of oil over medium-high heat. Add chopped bell pepper and saute (stirring occasionally) 3-5 minutes or until lightly charred. Next, add 3 1/2 cups of water and continue cooking yellow rice according to the package instructions. (Omit the margarine. Olive oil was already used in the sauteeing of the bell pepper.) When rice is finished and ready to be fluffed with a fork, fold in green peas.
