Cake Batter Pudding

When my kids entered school, I wanted to make them something special on their birthdays, that would be quick, so I could focus my cake making energy on their weekend party. This fun pudding has since become a birthday treat tradition!

Main Ingredients

3/4 cup white or funfetti cake mix

1/3 cup white sugar

3 tbsp cornstarch

2 and 1/2 cups milk (i recommend whole milk)

2 tsps vanilla

optional: sprinkles for topping


1In a large, microwaveable bowl, whisk together all dry ingredients.

2Slowly add milk while whisking, smoothing out any lumps.

3Microwave on high for 3 minutes.

4Remove and quickly whisk again, smoothing out any lumps.

5Microwave for 1 additional minute, remove and whisk again. Microwave additional 1 minutes intervals, as needed, to thicken.

6Whisk in vanilla

7Separate into 5 or 6 servings, depending on the size of your containers.

8Cover and chill, and add sprinkles before serving. Stir them in, to add some color, or just sprinkle on top!
