Cajun Cauliflower Rice With Turkey Sausage & Peppers
So if you have a busy week coming up, throw this recipe into your meal plan. No prep work. Takes 30 minutes to make. And leaves enough for leftovers.

1 turkey kielbasa
1 1/2 c. frozen peppers
1 16oz. cauliflower rice
2 tbsp. olive oil
salt & pepper to taste
1 - 2 tsp. cajun seasoning
1Heat the olive oil in a large skillet over medium heat
2Saute frozen peppers until soft for 2-3 minutes
3Slice kielbasa into 1inch rounds & saute with peppers for 4-5 minutes*
4Once everything is heated through, add the cauliflower rice & seasonings
5Stir periodically until the cauliflower is completely mixed & heated through
6Serve immediately or store in the fridge for 2-3 days
*Don't be afraid to let the kielbasa sit for 1-2 minutes and get a little crispy
