Caesar Salad Wraps

In a large bowl, toss lettuce, onion, cheese and dressing to coat. Divide mixture evenly down the center of each tortilla. Top with eggs and tomatoes. Fold up one end of the tortilla about 1-inch over filling. Fold right and left sides over the folded end, over lapping. Secure with toothpick if necessary. Cut in half and serve immediately.

Main Ingredients

16 small leaves of romaine lettuce, torn into bite-size pieces

1/4 cup chopped red onion

2 tablespoons of shredded parmesan or romano cheese

1/4 cup caesar dressing

4 flour tortillas, plain or flavored

4 hard cooked eggs, sliced

2 roma tomatoes, sliced

Preparation

1In a large bowl, toss lettuce, onion, cheese and dressing to coat. Divide mixture evenly down the center of each tortilla. Top with eggs and tomatoes.

2Fold up one end of the tortilla about 1-inch over filling. Fold right and left sides over the folded end, over lapping. Secure with toothpick if necessary. Cut in half and serve immediately.

Additional Notes

If you want, you can add either chopped cooked chicken or shrimp to the lettuce/onion/cheese mixture.
