Butternut Squash Waffles

1 cup whole wheat pastry flour
1/2 cup oats
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoons nutmeg
1 1/4 cup plain kefir*
1 teaspoon vanilla
1 cup butternut squash puree*
2 tablespoons honey
1In a large bowl, combine the flour, sugar, baking powder, baking soda, spices, and salt. Whisk until well combined. In another bowl, whisk eggs, kefir, vanilla, butternut squash puree, and honey. Add wet ingredients to dry and stir until just combined.
2Pour 1/4 cup batter onto hot waffle iron. Cook until steaming stops. Makes about 6-7 waffles.
Can sub milk for kefir. Pumpkin puree works as well!
