2 Sticks melted or softened unsalted butter
1/2 cup canola or vegetable oil
2 1/2 cups all purpose flour
1 3/4 cups sugar
2 cups buttermilk
2 teaspoons salt
2 tablespoons baking powder
6 extra large eggs
1Gather your tools, waffle iron, one medium sized mixing bowl, one small mixing bowl, one whisk, a set of measuring spoons, a one, half and quarter measuring cup.
2In the medium sized bowl combine all dry ingredients, flour, sugar, salt and baking powder and mix until ingredients are evenly distributed.
3in the small mixing bowl crack all six eggs and whisk vigorously. Add buttermilk, oil and butter to bowl and mix well.
4add contents of small bowl to medium bowl and gently whisk together well leaving some small lumps throughout.
Cooking times vary greatly by waffle iron, but most will have some sort of automatic timer that will alert you when done. We recommend not spraying your waffle iron with any sort of nonstick spray or oil but a light coating of oil may be needed for the very first one.
If you want to add anything to the mix like chocolate chips or fresh fruit, just separate a small amount into another bowl, add your mix in and mix well.
Serve with your favorite syrup and toppings
Keeps for about 2 to 3 days when placed in airtight container and refrigerated.
