Buffalo Cauliflower Tacos

This recipe is perfect for those nights you don't really feel like cooking, but also don't want to order out. It's as easy as chopping a cauliflower, covering it in hot sauce, then popping it in the oven - simple!

Main Ingredients

1 large cauliflower

1/2 cup hot sauce

kale

taco shells

2 tsp garlic powder

2 tsp salt

1 tsp oregano

pepper

lemon juice

Preparation

1Cut your cauliflower into small florets.

2Cover the pan with a generous amount of oil, then add the florets on top. Toss in oil until evenly coated.

3Season the cauliflower with salt, garlic powder, and oregano. Side note: you can sub the oregano for dill or basil if you'd like.

4Toss again, then roast in an oven preheated to 425˚F for 20 minutes.

5After 20 minutes, transfer the cauliflower to a bowl, then pour hot sauce on top. Roast for another 10-20 minutes.

6In a separate bowl, massage your kale with a small amount of oil. Season (to taste) with salt, pepper, and lemon juice.

7Once the cauliflower has finished roasting, warm up the shells, then assemble tacos!
