Brussels Sprout Salad W/ Pepper Jelly Vinaigrette
Shaved raw brussels sprouts with smokey bacon + diced pear + pepper jelly vinaigrette!

1 pound brussels sprouts, outer leaves removed and then sliced thin with a sharp knife or in a food processor fitted with the slicing blade
1/2 pound bacon, cooked and chopped
1 ripe pear, diced
1/3 cup red wine vinegar
1/4 cup olive oil
4 tablespoons red pepper jelly
1 shallot, minced
1 teaspoon grainy mustard
1/4 teaspoon kosher salt
1/4 teaspoon freshly cracked pepper
1To make the vinaigrette, combine the vinegar, olive oil, pepper jelly, shallot, mustard, salt and pepper in a mason jar. Secure the lid and shake until well combined.
2In a large bowl, combine the shaved brussels sprouts, cooked bacon and pear. Drizzle desired amount of vinaigrette and toss gently to combine. Season with salt and pepper to taste.
