Broccoli Slaw & Rice Noodle Stir Fry

Main Ingredients

1 pkg thin rice noodles (vermicelli)

1 pkg (12- 16 oz) of fresh broccoli slaw

1/2 onion, sliced

3 cloves garlic, minced

1 green onion, chopped

2 tbsp olive oil

1 lime, juiced

4 - 6 cups boiling water

~acaof stir-fry sauce recipe (see blog post above for recipe)

*salt & pepper to taste

*optional-sesame seeds


1Boil approximately 4-6 cups of water and pour over dried rice noodles. Let noodles soften for about 5 minutes. Drain off water and set aside.

2In a wok or large pan, on medium heat, add oil, garlic, and onion and sauté until onions are translucent for about 2 minutes- DO NOT let garlic brown.

3Raise heat to med/high and add in broccoli slaw and cook for approximately 1 minute. Add in drained rice noodles, ACAOF Stir-fry sauce and cook for 2 minutes. Remove from heat and squeeze on lime juice.

4Finish with chopped green onions and sesame seeds if so desired.
