A Jack In The Box inspired burrito recipe that is plant-based.

2 russet potatoes
Tofu Scramble Seasoning
1 block of firm or extra firm tofu
1 tbsp nutritional yeast
1/2 tsp garlic powder
1/2 tsp black pepper
1/2 tsp turmeric
1/4 tsp paprika
pinch of cumin
pinch of salt (optional)
1 tbsp of vegan mayonnaise
1Start by compressing your block of firm/extra firm tofu and let it sit for about 8 minutes.
2Meanwhile, start chopping potatoes into cubes and sauté in a pan with a little oil on low/medium heat for about 10 minutes. Stir occasionally.
3In a separate pan, crumble block of tofu and season with tofu scramble seasoning. Cover pan and let sit on low heat.
4Chop jalapeños, vegan sausage and add to tofu scramble along with potatoes.
5Heat flour tortilla, both sides, on low heat.
6Add tofu scramble mixture in flour tortilla and enjoy!
