Braised Cabbage With Sausage, Butternut Squash, And Red Onion Apple Relish
Melt-in-your mouth cabbage gets topped with juicy, braised chicken apple sausage, which is adorned with spiced butternut squash, apples, and red onions.

5 tablespoons of coconut oil, butter, or ghee; divided
3 teaspoons of salt, divided
1 sliced yellow onion
1 sliced head of green cabbage
2 cups chicken stock
4 - 5 2 packs of chicken apple sausage ( links per pack)
2 pounds of diced butternut squash (you can find pre-cut in your produce section)
2 sliced red onions
2 sliced cooking apples, such as granny smith or fuji
1 pound sliced brussel sprouts
garnishes-drizzle of maple syrup, fresh sage, fresh rosemary, blue cheese, parmesan
1Preheat oven to 375.
2In a dutch oven or any heavy, deep pot, melt 1 T. coconut oil over medium heat. Add sliced onion and sauté until golden, 5-10 minutes. Add sliced cabbage to onion, stirring until coated in cooked onions, about 3 minutes. Sprinkle with 1 teaspoon of salt.
3Pour 2 cups of chicken stock over cabbage (it will seem like A LOT of cabbage, but it will dramatically cook down). Put lid on pot and turn heat to medium-low and let simmer for about 15 minutes or until cooks down. Then, add the chicken sausage and let steam on top of cabbage for at least ten minutes.
4Meanwhile, prepare roasted veggies. On a baking sheet, spread butternut squash evenly and pour over 1 T. melted coconut oil. Sprinkle 1 teaspoon of pumpkin pie spice (or a combination of cinnamon, nutmeat, and clove) and 1 teaspoon of salt over squash. Using spatula or spoon, stir squash in sheet pan to evenly coat. Bake for 25 minutes or until fork tender.
5On a separate sheet pan, scatter sliced onion, apples, and brussels spouts. Pour 2 T. melted coconut oil over and sprinkle with 1 teaspoon of salt. Stir mixture until evenly coated and place in oven with squash for 25 minutes or until tender.
6Once both sheets of veggies are roasted, remove from oven.
7To assemble, layer bed of cabbage on the bottom of a shallow bowl and nestle 1-2 links of chicken sausage. Scatter squash, brussels, onion, and apple over cabbage. Garnish with fresh rosemary, sage, blue cheese, or parmesan.
I love and use Trader Joe's chicken apple sausages for this recipe, but I've found chicken apple sausage at Wal-Mart. Any sausage link would be fine, as long as it is not too spicy or strongly flavored.
