Main Ingredients

1 cup table cream (or milk of your choice)

1/2 cup organic frozen blueberries

3 packets of gelatin (you can find grass-fed gelatin for added benefits! )

1 tsp sugar-free vanilla extract

3/4 cup of liberte mediterranean 10% plain yogurt


1Put the blueberries in a saucepan on low heat until the juices bleed and the berries soften so you can mash them with a fork and make a paste. Turn off the heat and let sit.

2In a large baking pan pour half the table cream (or milk), the key is to have high surface area. Sprinkle the three packets of gelatin evenly overtop and let sit for 3 minutes then stir until combined.

3Put the other half of the table cream (or milk) in a microwave safe dish like a glass measuring cup and bring to a near boil in the microwave (about 45 seconds to a minute). Keep an eye on it - the cream can easily over boil and you'll have a mess!

4Whisk the warm cream into the cold cream mixture until smooth and creamy.

5Add in the vanilla, yogurt, and blueberry mixture and whisk until it is all blended.

6Finally, pour into your favourite silicone molds and allow to sit for at least one hour in the fridge. Remove when set and enjoy!

Additional Notes

Keep for 3-5 days in the fridge in an airtight container. I was able to use small muffin molds and an easter silicone mold to make 24 "candies".
