Blueberry Lavender Waffles

Preheat waffle iron. Grease coconut oil before and between batches as necessary. Main Ingredients

1 cup brown rice flour

1/2 cup gluten free oatmeal (quick cooking oats or oat flour)

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp sea salt

2 tbsp coconut sugar

1 egg, beaten

1 1/2 cup water

2 tbsp coconut flour

1/2 tsp almond extract

1 1/2 tsp dried lavender

1/4 to 1/3 cup frozen blueberries

Preparation

1Preheat waffle iron. Grease coconut oil before and between batches as necessary.

2In a large glass bowl, mix dry ingredients together (brown rice flour, oats or oat flour, baking soda, baking powder, salt, lavender, coconut sugar, and coconut flour). Whisk to combine. Set aside.

3In a medium sized bowl, mix wet ingredients together (water, egg, almond extract). Whisk to combine. Pour wet ingredients into dry ingredients. Mix well.

4Fold in frozen blueberries. Let batter sit for 3-5 minutes.

5Pour batter into waffle iron and cook per your waffle maker's instructions. I used 1/3 cup measurement of batter in my waffle iron.

6Cook until desired degree of doneness. Remove once cooked and cool on a wire rack.

7Serve as desired.
