Main Ingredients

2 cups fresh or frozen blueberries (thawed)

1/2 teaspoon of cinnamon

2 tablespoons lemon juice

1/4 cup sugar

pinch salt


1Place all ingredients into Instant Pot (keeping 1/2 cup of blueberries aside)

2Pressure cook for 1 min and allow to naturally release (8-9 mins)

3Remove lid and add remaining blueberries.

4Saute on medium (3 mins) then turn to low (2 mins) to allow some liquid to evaporate, smushing the berries a little as you stir.

5Allow to cool. Serve.

Additional Notes

This is a delicious way to eat blueberries as a topping. You may make this on a stove top. (Just cook 1 3/4 cups of berries and ingredients on medium heat until softened (6-7 mins) and continue recipe as written.)
