Blackberry Thyme Champagne Fizz

In a small saucepan, bring the cup of blackberries, one sprig of thyme, water, and sugar to a boil. Main Ingredients

1 cup blackberries + 8 more for garnish

1 cup water

1 cup sugar

1 bottle of champagne

4 ounces or 1/2 cup gin

5 long sprigs of thyme

1 cup ice

Preparation

1In a small saucepan, bring the cup of blackberries, one sprig of thyme, water, and sugar to a boil. Reduce the heat and simmer for 10 minutes, until the blackberries are soft and the simple syrup has turned to a deep redish color.

2Remove from the heat, drain the blackberries, and allow the mixture to cool. You can do this step well in advance as the syrup will keep for at least a week in the fridge.

3Next, add 1 ounce of gin to a cocktail shaker, followed by 2 ounces of the homemade blackberry simple syrup, and a cup of ice. Shake for 5-10 seconds and then strain into a tall thin glass or champagne flute.

4Drop two blackberries in each glass, slowly fill the rest of the glass with your favourite champagne, and garnish each glass with a sprig of thyme.
