Main Ingredients

1 cup paleo pancake mix (birch benders is the mix i used)

1 cup almond milk

3 tbsp cacao powder

1/2 tsp almond extract

1 tsp vanilla extract

6 frozen cherries, chopped

2 scoops collagen peptides (i used further food brand)

Preparation

1Mix all ingredients in a large glass bowl. Whisk to combine. Set aside for a few minutes (about 3-5) to allow flavors to meld and flours to thicken.

2Preheat waffle iron. Grease with coconut oil before & between batches if necessary.

3Once preheated, scoop batter into waffle iron (I used 1/3 cup measurement to scoop my batter). Cook per your waffle maker's instruction manual.

4Once cooked, remove waffles & allow them to cool on a wire rack. Serve as desired. Enjoy!!
