Black Bean & Quinoa Burgers

1/2 cup quinoa
1 tsp extra virgin olive oil
1/2 yellow onion, chopped
1 glove garlic, minced
1 can black beans, rinsed and drained
1 large egg
1 1/2 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1Add quinoa to a small saucepan with 1 cup of water. Bring to a boil then reduce heat and cover. Let cook for 10-15 minutes until all water is absorbed and quinoa is soft. Remove from heat.
2Heat olive oil in a saute pan over medium heat and add the onion and garlic. Season with paprika and saute until onions are softened (about 5-6 minutes). Place the mixture into a large bowl.
3Add black beans, egg, a pinch of salt, onion powder, garlic powder and cumin to the bowl.
4Use a potato masher or fork to mash the ingredients together until a pasty mixture forms. Stir in cooked quinoa and stir until evenly distributed.
5Form the mixture into 6 equal patties. Compact them with your hands and place on a baking sheet.
6Cover patties with plastic wrap and refrigerate overnight.
7When ready to serve, choose to bake or fry your patties.
8To bake: Preheat the oven to 400 degrees F. Spray a baking sheet with nonstick cooking spray and place patties on the sheet. Cook for 10 minutes until patties are golden brown, then carefully flip & cook for another 10 minutes.
9To fry: Heat a small amount of oil in a saute/frying pan. Cook patties for 10 minutes. Carefully flip and cook for another 10 minutes.
10Serve patties as you wish on buns and with toppings of your choice.
