Alkaline Rich Black Bean & Leek Salad

After becoming inspired by a testimony on alkaline benefits, I decided to create a flavorful and colorful salad that is super healthy and just as delicious!

Main Ingredients

3 leeks-soaked, cleaned, and sliced

4 large leaves of swiss chard, cleaned and sliced

1/2 red onion-thinly sliced

4 whole carrots-cut lengthwise into sticks

2 cups black beans, prepared

5 cloves garlic-minced

4 sprigs fresh thyme (2 tsp if dried)

1 lime-juiced

1 tbsp abstract spice

2 tbsp coconut oil

sea salt

fresh cracked pepper

yellow or black rice, prepared


1Take time to prep all vegetables first. This should take about 15 minutes.

2In a large bowl, toss carrots in Abstract Spice completely. Add to the air fryer for 20 minutes on 370. Carrots should be very tender and browned on the ends- set aside when done. (*If without an air fryer, roast carrots in the oven on 400 for 15-20 minutes)

3In a large skillet pan, melt coconut oil on medium heat and add garlic and onions. Sauté for approximately 2 minutes NOT allowing garlic to brown.

4Add in leeks and continue to sauté for approximately 5 minutes. Mix in carrots and cook for 3 more minutes. Toss in Swiss chard and black beans, along with sea salt (to taste), cooking for an additional 4 minutes.

5Once all ingredients are combined, finish with lime juice and sea salt/pepper and serve!

Additional Notes

This bright alkaline-rich salad is delicious warm over yellow or black rice, but can also be served at room temperature. It's truly a beautiful dish loaded with health benefits. Enjoy!
