1 large clove garlic

1 15 oz. can black beans

2 tbsp reserved liquid from beans

2 tbsp fresh lemon juice

1 1/2 tbsp tahini

3/4 tsp cumin

1/2 tsp kosher salt

1/4 tsp cayenne pepper


1Mince garlic. Drain beans and reserve liquid but do not rinse.

2Blend all ingredients in food processor until smooth.

3Garnish with a drizzle of olive oil, feta and cilantro. Or if you prefer, paprika and greek olives.

4Serve with pita bread, pita chips or crudités.

Additional Notes

For a slightly different version, substitute the reserved bean liquid with 2 Tbsp of olive oil and add 2 chopped scallions and approximately 1/8 cup of chopped cilantro.
