Simple 'n' Easy Black Bean Burgers

These patties are fresh, hearty, and filling. Coupled with your favorite fry and topping, this is the perfect recipe to satisfy those burger and french fry cravings that we all are victim to.

Black Bean Burger Ingredients

1 ear of corn

2 15fl. oz. cans of black beans (rinsed)

1 small yellow or white onion (finely diced)

1 1/2 tbsp gluten free all-purpose flour

1 tsp extra virgin olive oil

1 tbsp salt

2 tsp italian seasoning

1 tsp garlic powder

1 1/2 tsp cumin

1 tsp paprika

dash of black pepper

Preparation

1Preheat the oven to 450°F.

2Remove the husk and silk completely from the corn.

3Brush melted vegan butter or oil on the corn, sprinkle with salt and pepper, and wrap in tin foil.

4Let the corn roast for 20-25 minutes until bright yellow and slightly browned.

5Remove the corn from the cob with a sharp knife.

6Open, rinse, and pour black beans into a large bowl and mash along with the roasted corn until the beans are mashed and the corn is evenly incorporated (feel free to use your hands!).

7Once mashed, add the finely diced onion, gluten-free flour, olive oil, salt, pepper, and remaining spices. Combine until well-mixed.

8Form 4-1/2 Inch patties with your hands. These patties will be about 3/4-inch in thickness.

9Heat a non-stick pan to med-high Heat. Add a tablespoon of olive oil into the pan. Wait for the first whisp of smoke and then add the black bean patties.

10Fry until the patties begin to brown on one side and flip (about 3-5 minutes). Do the same for the other side and remove from the pan.

11Enjoy immediately!
