Bison Chili

If you are looking for a healthy protein packed hearty meal to warm your belly on a cold night, you came to the right place! This is really quick to put together. It tastes even better the following day (great for meal prepping), and it freezes well.

Main Ingredients

20 oz ground bison

2 teaspoon olive oil

3 cloves of garlic, minced

4 tablespoons chili powder

2 teaspoons ground cumin

1 teaspoon dried oregano

1/4 teaspoon cayenne pepper

1/2 teaspoon salt, plus more to taste

7 oz chopped bell pepper (i mix green, red and yellow)

7 oz chopped white onion

12 oz can of tomato paste (no salt added if possible)

15 oz can of red kidney beans (no salt added if possible)

15 oz can of black beans (no salt added if possible)

28 oz can of diced tomatoes (no salt added if possible)

Preparation

1Place oil in a large pot and place over medium high heat. Add in the garlic, onion and bell pepper and saute for 5-7 minutes, stirring frequently. Next add in ground bison and break up the meat; cooking until no longer pink. Next add in chili powder, cumin, oregano, cayenne pepper and salt; stir for about 20 seconds.

2Drain and rinse both cans of beans.

3Next add in tomatoes, tomato sauce, beans. Bring to a boil, then reduce heat and simmer for 30-45 minutes or until chili thickens and flavors come together.

4You can replace the ground bison with any ground meat and follow the same steps. Please note that it will change the calories/macros. Additionally, the brand of red beans I used (HEB), was 15.25 oz. However, I believe most brands just say 15 oz. The 15.25 oz can was used to calculate the calories and macros. That small difference over the 7 servings will not make much of a difference.
