Biscuits

Combine all dry ingredients into a large mixing bowl. Mix in shortening until no chunks can be seen. Add dairy and mix until just comes together. Roll dough out 3/4" thick and cut biscuits using cutter designated by the Chef. Place biscuits on a parchment lined sheet pan and bake @ 350ºF for 12 min until golden brown.

Main Ingredients

17 1/2 cups flour

6 Fl Oz baking powder

5 tsp cream of tartar

2 tsp baking powder

5 tsp salt

cup sugar

3 1/3 cup shortening

4 cup buttermilk

3 cup half & half

Preparation

1Combine all dry ingredients into a large mixing bowl.

2Mix in shortening until no chunks can be seen.

3Add dairy and mix until just comes together.

4Roll dough out 3/4" thick and cut biscuits using cutter designated by the Chef.

5Place biscuits on a parchment lined sheet pan and bake @ 350ºF for 12 min until golden brown.

Additional Notes

Dough scraps can be reworked 2 times before discarding.
