Main Ingredients

8 - 10 potatoes (any variety)

1 small onion, chopped

2 - 3 chopped pickles

8 oz italian dressing

1/2 cup pickle juice

1 - 2 small stalks of celery, chopped

6 hard boiled eggs, sliced

1 tbs sour cream, heaping

1 tbs mayonnaise, heaping

1 tsp mustard

1/2 tsp paprika (optional)

salt and pepper to taste

Preparation

1Chop potatoes into about 1 inch cubes (peel beforehand if desired). Boil until just tender.

2Add onion, pickles, and celery. Stir to combine.

3Pour Italian dressing, and pickle juice over the potato mixture. Stir to coat everything.

4Add hard boiled eggs (if desired reserve some slices to put on top), mayonnaise, and sour cream. Mix everything together, breaking up the eggs as you stir. If it seems dry more sour cream and mayonnaise to the mixture.

5Add salt and pepper to taste.

6Top with remaining sliced egg and paprika
